Mascarpone is a soft, smooth and rich cheese produced from the whey of cow’s milk. Made originally in southern Italy, but today produced throughout Europe and North America, it is recognized in Italy as a prodotto agroalimentare tradizionale (PAT), which means it has a Protected Designation of Origin status and can only be made in certain parts of Italy. This is a traditional Italian cheese. It’s made from cow’s milk, is soft and has a sweetened, buttery flavor. This special cheese is often served as a dessert topping or filling in cakes, pastries and breads.
