This Pecorino Romano cheese is aged for at least one year, during which it becomes more flavorful and aromatic. Aged Pecorino cheese is a treasure. The taste will vary for each person and depending on your point of view, but it can be best described as a bit spicy, piquant and salty. This sort of cheese pairs well with a glass of wine or beer and fresh bread to make an excellent snack or appetizer.

The first recorded Pecorino Romano was made during the Roman period, when sheep were grazed on the hilly areas of central Italy. The flavour of it has been described as salty and sharp with an aromatic tangy aftertaste. The hillsides of Rome are still used to make Pecorino Romano today, which is aged for only 3–6 months before being exported.
