Taleggio by Arrigoni
Taleggio is a name of one of the oldest soft and aromatic cheeses produced in Val Taleggio, Italy. It was named after the caves where it is produced for each season, according to tradition. In order to stop mould growth, the cheese is washed with seawater once a week. The maturation takes 6 weeks and forms a thin crust. This cheese has sweet taste, buttery and very aromatic in the matured product. The rind is thin and soft, pinkish in color The consistency is fondant under the rind, more firm and friable in the center. Ageing is minimum 35 days. The color is pale yellow under the rind, whiter in the center .
